Like everyone, there are a few dishes that are in my top 3 or 4. You know the ones….the ones that make your mouth water just thinking about them. They never get old. You never get tired of eating them. You enjoy every single bite, every single time. They are the classics, your classics. You almost get a (food) high when you eat them. Because they are THAT good. That “O.M.G this is good’ good. Steak frites is one of my classics. And this brilliant take on it is now my favourite version of it. It is a specialty of chef Andrew Carmellini. He tops seared strip steaks with a butter infused with tarragon, shallots and vinegar and serves them with tangy French fries made with vinegar-brined potatoes. I skipped the frites and made the worlds best Ceasar salad instead. Another classic 🙂
Food and Wine’s April 2015 issue showcases some amazing French recipes—many of them classics with a twist. This one is just ‘plain’ old world French food. You can almost picture yourself in a bistro in Paris while you’re eating every, delicious, scrumptious morsel. Enjoyed with a rich red wine, it is perfection. Not a bad way to spend a Saturday evening 🙂
