When I worked at a bank in the financial district of Toronto a short walk from home, I had a schedule that allows me to work out at lunch. Heaven 🙂 The gym, a pretty swanky affair, had a bistro that served the most delicious quinoa salad. I had it several times a week. It was that good. And healthy-wow!
Last week I had such a craving for it. No longer a member of the gym (LOL), I decided to take a stab at making it myself. Fairly simple I thought. The ingredients were so straightforward: quinoa, tomatoes, green onions, cucumber, chicken (store-bought, shredded, pre-cooked), feta and lettuce topped with sun-dried tomato dressing (store-bought). You can use any dressing—whatever ‘s your favourite. It was so tasty! I have it all the time again :-)))
