As it’s tough for me to get out for brunch except for when it’s warm enough for a patio (due to Hudson’s severe separation anxiety), I try and make my own fun brunch food here at home.
I love pancakes and waffles, but haven’t had much luck making good ones. They often turned out flat, unevenly cooked, burnt. I bought a waffle iron thinking it might be the miracle answer. It improved them, but they still weren’t anything to write home about….
…until I found this recipe. O.M.G. Total game changer. Super easy and you always, 100% of the time, get perfect waffles! My mom said they were the best ones she’s ever had- and my mom knows waffles, LOL.
- 1 3/4 c. all-purpose flour
- 1/4 cup corn starch
- 2 tbsp. sugar
- 1 tbsp. baking powder
- 1/4 tsp. salt
- 2 eggs
- 1 3/4 c. milk
- 1/2 c. cooking oil
- 1 1/2 tsp. vanilla
- a pinch of nutmeg
- 1/2 tsp cinnamon
- Preheat and grease waffle iron. Grease iron before each waffle.
- Whisk all ingredients together in a large bowl until smooth.
- Pour about 1/2 cup of batter onto the waffle iron and cook for 3:30 minutes or to your liking.
- Serve hot and fresh with berries and whipped cream.

(Note to self: The next time I invite friends over for brunch, I won’t attempt to make 3 different things, 2 of which are pretty involved. It leads too being a cranky hostess and no one likes that, LOL).
