Chicken salad is a great, light way to get some protein and makes for a nice lunch. The challenge is making it healthy—the usual mayo-laden recipes aren’t great if you’re watching your weight and cholesterol as I am (high cholesterol runs in my family, yay!). I recently lost over 15 pounds and I’m not about to watch it all come back! (See my weight loss story here).
This recipe is super easy. It uses yoghurt so is very healthy and includes nuts so is a really tasty new take on a traditional dish. I suppose you could make it into a sandwich, but I ate it ‘straight up’.
