I hate Winter BUT I try and make the best of it. So, even though it was slightly drizzling (freezing rain) and looked dreary out (not sunny at all!), I decide to take the Hudster to the beach so he could have a good time and run around. (A tired pup = a happy owner so a win-win).
We (okay, me) lasted about 40 minutes. IT WAS FREEZING. The wind howled as we headed out across the beach towards the water. My forehead hurt it was so cold – and I was wearing a hat!
Hudson of course acted like it was balmy weather, like he didn’t feel the cold at all. He ran around like he’d never seen the outside (He has, not to worry). He does this pretty much every time we go out. It’s this ‘This is the best day ever’ philosophy he’s got.
I came home wanting something comfort-foody to warm me up. I had some ‘odds and ends’ in the fridge. I’m trying to eat as much from my fridge and cupboards before I buy more groceries. A bit of a challenge thingy to see if I can stop wasting food. It also forces me to try new recipes and new food/taste combos 🙂
So…today I had some chickpeas and cauliflower – a vegetable I’m trying to get off the ‘hate it, don’t eat it’ list if only because I hear through the grapevine is the new kale. aka cool ‘it’ veg everyone’s eating dahling.
I ended up making a curry. Healthy, tasty, kinda comfort-foody- especially the coconut milk part. Love coconut. You can leave out or substitute the cauliflower with other veggies. Broccoli I think would be nice in this. But then I love broccoli and would eat it in pretty much anything. Except desserts. Don’t mess with desserts. I don’t care how healthy it is.
I served the curry over Jasmine rice. If you’re not into rice, you can try it with naan bread. Whatever floats your boat.
